3. Knead the dough on a lightly floured surface for about 5 minutes, until it’s smooth and slightly sticky. If it’s too sticky, add a little more flour; if it’s too dry, add a splash more yogurt or water. Let the dough rest for a few minutes.
4. Divide the dough into 8-10 equal pieces. Flatten each piece into a small disc, about 3-4 inches in diameter.
5. Spoon about 1-2 teaspoons of pizza sauce in the center of each dough disc, then top with a generous amount of mozzarella and a few pieces of pepperoni.
6. Carefully fold the edges of the dough up around the filling, pinching and sealing the dough completely to form a ball.
7. Place each stuffed ball seam-side down on the prepared baking sheet.
8. Brush the tops of the dough balls with either melted butter or a beaten egg for a golden, crispy finish.
9. Sprinkle some bagel seasoning (or your favorite seasoning) on top of each bomb.
10. Bake for 18-22 minutes, or until the bagel bombs are golden brown and cooked through.
